equipment needed: Just an authentic Molcajete and pestle
Ingredients:
2 RIPE avacados. They need to be black on the outside
1 plum tomato
2 or 3 cloves of fresh garlic
1 or 2 stalks of fresh green onion with the bulbs and roots
some fresh cilantro
Fresh ground pepper
1/2 of a lime
some olive oil, extra virgin
1 Jalapeno pepper Optional
Some salt Optional
Instructions:
Start by coating the molcajete with some olive oil and then grinding up the the cilantro, garlic, and green onion in the molcajete with the pestle. If you want to give it more 'kick' then add 1 jalapeƱo. Add chopped or diced tomato and grind some more. Add avocados. This video shows how to easily remove the skin and seeds: http://www.youtube.com/watch?v=eGd6GfHG77I If you use ripe avocados you won't even need to make any criss cross cuts you just simply scoop out the avocado with a spoon into the molcajete it takes just two seconds to do. Mash the avocado halves in the molcajete with the pestle and stir everything together. Squeeze your half lime into the mix and stir again. Some people like adding salt; I do not so I left it as optional. Add one of the avocado seeds to help reduce browning. The lime juice will also keep the guacamole from browning. Serve with organic chips, bread, pita bread, anything you want for dipping and enjoy the heck out of it I know you will :)

CORRECTION: I'm told by a reliable Hispanic friend of mine that olive oil and green onions aren't a Mexican thing. So as it turns out this is a hybrid guacamole of classical Mediterranean and Mexican. Even BETTER :-)

Lime Juice
Extra Virgin Olive Oil
Fresh Cilantro Chopped
Fresh Garlic Chopped

2. Make the beans! Get out a medium sauce pan. Drain and rinse a can of organic black beans and poor the beans into the sauce pan. Add about a forth cup of chopped sweet onions, just a pinch of sea salt and fresh cracked peppercorn to taste, slice or chop up a few baby portabella mushrooms and stir all together on a low heat.
3. Grill the Chicken! Place thawed chicken breast(s) on the grill and cover. As the chicken cooks; baste both sides with the lime sauce. About half way through put some of the sweet onion on the grill in large slices along with the broccoli still on the stalk away from the bulk of the heat. Baste the onion and broccoli stalk with the lime juice.
Put it all together and serve!

Chocolate "O" for O r g a s m To Start EVERY Day off right :)
Heavenly chocolate or an incredible "O" is enough to start any day on the right foot. Seriously either one of the two will do right?!?! I personally prefer to combine the two :) Why not have your, "Cake and Eat it To" when it's fully justifiable right? It is nearly impossible to have a bad day after a treat like that and that is why I give myself that immaculate treat of a Chocolate "O" EVERY morning to start each and every day. I hope that you begin to do the same! You'll LOVE how you feel every day. Consequently you will be a more productive; happier human being and all of lifes treasures will reflect as much.
The Recipe! Surprisingly VERY simple all you need is a blender, a few ingredients, and about one minute of time.
Chocolate Banana Frozen BlueBerry OR Strawberry (AKA Chocolate "O") :-)
1 scoop Chocolate Shakeology (usually for Breakfast)
1/2 cup frozen blueberries OR Strawberries (I go by site I don't actually measure this)
12 ounces of skim milk
1/2 banana
Optional: Shakeology Boost: The Fiber
Optional: Mills ground Flaxseed
Optional: Ice for added thickness and more smoothie like
Or Try 1/2 serving of Shakeology Twice a Day instead of 1 Full Serving once a Day and make Shakeology pay for itself twice! My users save between $200 & $400 a month in groceries while paying only $90 for Shakeology with the 25% discounts. (Ask me how if you're interested)

Tilapia Fillet sandwhich - Grilled
This afternoon I didnt have a lot of ambition to make anything complex so I just decided to throw together an easy fish fillet sandwhich. I was taken by surprise at how delicious my quick "throw everything together and hope it tastes good" was!
- 1 wild caught Tilapia Fillet
- Raw Spinach
- 1 slice of sweet onion
- Sea Salt
- Fresh ground cracked peppercorn
- Hellmans mayonnaise
- Two slices of Arnolds Potato Bread
- Extra Virgin Olive oil
I grilled the Tilapia in my foreman grill, brushed some extra virgin olive oil on both sides and salt and pepper to taste. I lightly toasted the two slices of arnolds potato bread then spread some hellmans mayonnaise on only one of the two pieces of lightly toasted bread. Last but not least I added the raw onion and raw spinach leaves and viola! Probably the best tasting fish sandwhich I've ever had before. Try it out and enjoy :)

Salmon Ginger with Fresh Broccoli
Want the easiest and one of the most tasty ways to make salmon? Try this out!
I never measure this stuff out. You just know how much to use as you prepare it...
- Salmon Fillet - Wild caught only NO farm raised
- Fresh ground Ginger
- Sea salt
- peppercorns freshly ground
- 2 or 3 Cloves of Garlic chopped
- Broccoli
- Olive oil, extra virgin OR non stick spray
In a medium sauce pan heat up some oil or non stick spray and add wild salmon over low-medium heat. Flip salmon when half way cooked; add salt, pepper, and ginger to taste on both sides. Add chopped garlic and broccoli to the same pan as the salmon for only the last couple of minutes to minimize nutrient destruction of the broccoli. You can lightly add salt and pepper to the broccoli if you would like. That's it! Serve and enjoy. Believe me you WILL enjoy this ridiculously simple and tasty dish :)
My mouth is Salivating as I eat this while I share this recipe with all of you ;)

Broiled or grilled Cayenne Blackened Salmon
I just finished eating this splendid dish. It was soooooo good I had to add it to my food blog. I probably know a dozen ways to make a tasty salmon and I am sure I will be adding more eventually along with some pizzas which I have yet to do still :) This one I just invented tonight to try something different and it was a grand slam success. It would be silly not to share it with you!
Fillet of wild salmon - size will depend on how hungry you are and quantity will depend on how many people you are serving.
Olive Oil extra virgin
Garlic cloves or minced garlic
Seasonings:
Sage to taste
Sea Salt just a pinch of
Fresh Ground Black Pepper to taste but not too much here
Cayenne Pepper to taste
Chef Paul Prudhommes Magic Seasoning Blends, "Blackened Redfish Magic"
Start by brushing wild salmon fillet(s) with olive oil, extra virgin. Season fillet(s)of wild salmon on both sides. Place seasoned salmon fillet(s) on broiler pan. If skin is still on, skin side down then stick 'em in the oven. If you're grilling just place the fillet(s)skin side down on the grill. I oven cook at about 415 - 425 degrees and it takes anywhere between 10 and 14 minutes depending on if the fillet(s) are frozen or not. On the grill it varies even more depending on how hot the coals are burning. Either way, cook until done to your liking :) If you don't like spicy food just leave the cayenne pepper off.
Tonight I made this with a side dish blend of fresh broccoli and onion cooked in olive oil and garlic seasoned with a little bit of fresh ground black pepper. It went great as a side dish with the salmon.
Make sure you write me to let me know how it was if you decide to try out my Cayenne Blackened Salmon ;)
